How Levy has Streamlined Monthly Scope 3 Across 60+ Venues

Levy and Foodsteps joined other food and drink businesses at the Hotel, Restaurant and Catering Show (HRC) 2025, part of London’s Food and Drink Hospitality Week, to share the latest innovations in the industry.
In a panel titled, “Driving Sustainable Action through Data,” Foodsteps founder Anya Doherty, Levy’s Sustainability Director Kevin Watson, and Levy’s E15 Insights Sustainability Data Lead Andrew Jones discussed Levy’s sustainability journey to date.
Streamlining Scope 3 reporting

Covering the highs, lows and data challenges of Scope 3 reporting, Watson and Jones praised Foodsteps – Levy’s carbon accounting partner – for helping them navigate the hugely complicated process of accurate and robust Scope 3 reporting.
Andrew Jones explained Levy’s ambition to move from a spend-based to a volume-based emissions assessment that can ultimately give Levy better strategic insight, as well as the challenges in ensuring its data is as rigorous and complete as possible.
How carbon data is driving change

Watson, who has been steering an ambitious programme of sustainability change across Levy since 2022, shared tangible examples of how Levy is using LCA data to inform smarter decisions across its operations:
- Championing wild venison: Data on the relative difference in carbon impact between beef and wild venison has prompted Levy to champion this lean and nutritionally dense red meat, reducing spend on more carbon intensive beef and lamb.
- Seaweed-based packaging: Levy has begun rolling out Notpla’s seaweed-based packaging across its business after LCA data showed emissions reduction by up to 70% compared with conventional plastic alternatives.
Looking beyond carbon
With a greater focus on data going forward, Levy is looking beyond carbon to drive meaningful sustainable change across its business – viewing sustainability through an optic of environment, nature and health.
